Homemade Tamarind Pulp ( can store for a month)



Ingredients:
1.    250gm tamarind
2.    lukewarm water
For making tamarind pulp:


1.  In a medium bowl soak 250gm tamarind for 1 hour by adding lukewarm water.  
2.  Add the water till all the tamarind soaks.
3.  After 1 hour just add another half to 1 cup of lukewarm to the tamarind. and pressure cook it for 2 whistles. (in the cooker just place the bowl in which tamarind is soaked. Need not to transfer to the cooker and pressure cook).
4.  After 2 whistles switch off the stove and immediately release the pressure of the cooker and open it and take the bowl out and allow it to cool.
5.  Now into a cup strain the water which is on the top of the bowl. This water can be used for taking 2nd and 3rd extract.
6.  Now just mash the tamarind using hand and transfer into a big strainer and filter the pulp.
7.  Transfer the residue back to the bowl and add the water (see step 5) and mash it again and extract the pulp similar to step 6.
8.  Repeat the process for 1 last time. And throw away the leftover residue. (don’t strain till the end).
9.  Now we have 3 extracts of tamarind pulp. Now finally filter the pulp if u find any small residue in it. And store it in a tight glass jar/ glass bottle. 
Now homemade tamarind pulp is ready you can store it in the fridge for 1 month and use it for sambar, puli kulambu and for many other dishes which needs tamarind.



Note: 
1.    The important thing is don’t store the pulp in any plastic or any other container.
2.    Use only glass jar/ glass bottle. And use only normal silver spoon to take paste.
3.    Because tamarind reacts with plastic.
4.    Allow the pulp to completely cool down and then store it in the glass jar.
5. Don't overcook the tamarind to take the pulp, Because it will lose its taste.
