Home Style Pav Bhaji




Ingredients:
1.       1tbsp Butter (unsalted)
2.       1 Cup onions (chopped)
3.       2 Medium size tomato (blanched & chopped)
4.       ½ tsp Ginger garlic paste
5.       ¼ tsp Coriander powder
6.       ½ tsp Kashmiri chilly Powder (for colour)
7.       Red chilli powder (based on your spicy level)
8.       Salt to taste.
9.       ½ Cup green peas (boiled)
10.   1 Big carrot (boiled)
11.   2 Medium size Potato (boiled)
12.   2 ½ tbsp Pav bhaji masala
13.   Some coriander leaves chopped
14.   Pav bun



For blanching tomato:
1.       In a kadai /saucepan add water and allow it to boil.
2.       Once water starts boiling add the whole tomato by making an X shape spilt on the bottom. And allow it to boil for 5 minutes or until you able to peel the skin of the tomato.
3.       Now switch off the stove and remove the tomato from the boiling water and put it the normal water to stop further boiling and allow it to cool for 2 minutes.
4.       After 2 minutes peel the skin and keep it aside. 

For making pav bhaji:
First, we need to make the bhaji separately and need to toast the pav separately.

For making bhaji:
1.       Heat the kadai by adding 1tbsp of unsalted butter.  
2.        Once the Butter is heated add 1 cup chopped onion and sauté it, till it becomes transparent in colour.
3.       Now add ½ tsp ginger garlic paste and sauté till the raw smell goes.
4.       Now add 2 chopped tomatoes and mix it well. Then add
·     ¼  tsp coriander powder
·      ½ tsp Kashmiri chilli powder ( for colour)
·      Red chilli powder( based on your spicy level)
·     Salt to taste

                And mix it well and cook for 1- 2 minutes (if needed sprinkle some water).
5.       Now add required amount of water and add boiled carrot and green peas and cook for 2 minutes.
6.       Now using masher roughly mash the vegetables.
7.       Then add boiled potato and mash it well so all vegetables and masala blends together.
8.       Now if you find bhaji is very thick add some water and add 2 ½ tbsp Pav bhaji masala and mix it well. And cook it for 1 minute.


9.       Now finally switch off the stove and garnish the bhaji with chopped coriander leaves and keep it aside. 


Toasting pav bun:

   1.       Heat a dosa tava by adding some butter.
   2.       When the butter starts melting place the bun and toast for about 30 seconds and keep it aside.
Assembling pav bhaji:
   1.       In a plate place the toasted bun and the required amount of bhaji.
   2.       Now if need add butter to the bhajji and sprinkle some chopped onion and place a piece of sliced lime.
Now yummy home style pav bhaji is ready to serve.


Note:
          1.       As I did not get pav bun this time in Kuwait. I used normal milk bun.
          2.       You can make the bhaji even 3 -4 hours before. At the time of serving just toast the bun and                                               heat bhaji.
          3.       The left over bhaji can be spread in the bread and make it as bhaji sandwich. Similarly can                                                 spread in the dosa and make it as bhaji dosa.
