Baby Corn Fry



Ingredients:
1.    9 baby corn
2.     2 tbsp maida / plain flour / all-purpose flour
3.     2 tbsp corn flour
4.     1 tsp red chilli powder
5.     ¼  tsp Kashmiri red chilli powder
6.     ½ tsp garam masala
7.     ½  tsp crushed pepper
8.     1 – 2 tsp soya sauce
9.       Salt to taste
10.   Water as required
11.   Oil for deep frying


For blanching baby corn:
1.    Cut each baby corn into 2 equal vertical halves.
2.    If need further cut the vertical pieces into 2 size medium pieces.


3.    Now in a pan boil the water.
4.    Once the water starts boiling add this baby corn pieces and blanch it for 5 minutes.
5.    Finally, switch off the stove and drain the water and keep the baby corn aside.  
For Marination :
1.  In a mixing blow add all the below ingredients.
·         2 tbsp maida / plain flour / all-purpose flour
·         2 tbsp corn flour
·         1 tsp red chilli powder
·         ¼ tsp Kashmiri red chilli powder
·         ½ tsp garam masala
·         ½ tsp crushed pepper
·         1 – 2 tsp soya sauce
·         Salt to taste.


Now add required amount of water and mix it well and prepare a semi-thick batter as shown in the picture.


2.    Now add the blanched baby corn to the batter and mix it well and allow it to marinate for minimum 10 minutes.

To fry baby corn:
1.    In a kadai add required amount of oil to deep fry the baby corn.
2.    Once the oil is heated (slightly higher than the medium heat), add the marinated pieces 1 by 1 and fry it until it turns golden brown.

Now yummy baby corn is ready to serve as evening tea time snack (or) as a starter.
