Instant kambu dosai (Pearl millet or Bajra flour)

Before going into the recipe let us go through some   interesting facts and health benefits of pearl millet (Kambu):


What Is Pearl Millet?
1.    Pearl Millet is a cereal crop. Its biological name is Pennisetum glaucum.

2.    Millet in India is called as ‘Bajra.’ It grows in arid and semi-arid tropical regions of the world. Millet is cultivated in India and Africa.

3.    India is the largest producer of pearl millet. It is mainly grown in Rajasthan as it needs moderate amounts of water. It is also gluten-free.

4.    This millet is also known as bird food. It can be as creamy as mashed potatoes and as fluffy as rice. It has an essential taste and has great nutrient value.

Nutritional Value Of Pearl Millet:

1.    Pearl Millet is high in proteins, calcium, folic acid, and fat. It has essential compounds like phytic acid and niacin.

2.    It is a good source of fibre. Millet is rich in minerals like phosphorus and zinc and has a high starch content.

3.    It is famous for its high iron content.

4.    These can be easily seen if you take about 100g of millet.
        100 gm of millets has :
·         10.6 g of proteins,
·         16 g of iron,
·         1.3 g of fibre,
·         2.3 g of minerals
·         378 calories.
·         It gives about 73% of carbohydrates
·         0.4 g of fat.

5.    It favorably provides 0.8% of calcium, 37.5% of copper, 28.5% of magnesium, 81.6% of manganese, 28.5% of phosphorus and 5.57% of potassium.

6.    So, we can say it has various vitamin contents as Vitamin E, Vitamin K, Thiamin, Riboflavin, Niacin, Vitamin B6, Folate and Pantothenic acid.

7.    This millet contains Omega 6 fatty acids that are beneficial for the human body.

8.    This millet contains all essential amino acids and are particularly high in lysine, methionine, and cysteine.

Kambu dosa recipe:

Ingredients:

      1.    1 cup Kambu maavu -/ Bajra flour
      2.    ¼  cup Urad dal
      3.    1tsp Fenugreek Seeds
      4.    Some Coriander leaves
      5.    Some curry leaves
      6.    2 green chillies
      7.    2 Inch ginger
      8.    Salt - As needed
      9.    Oil - As needed
     10.  Water as required 

Making dosa batter:

1.    In a mixer jar add
·       ¼   cup Urad dal
·         1tsp Fenugreek Seeds
Make it into a fine paste and keep it aside

2.    Now again in a mixer jar add
·         Some coriander leaves
·         Some curry leaves
·         2 green chillies
·         2 Inch ginger
Make them into a coarse paste.

3.    In a mixing bowl add
·         1 cup Kambu maavu (Bajra flour)
·         Fine paste of urad dal & fenugreek
·         coarse paste of green chill, ginger, coriander & curry leaves
·         salt to taste
·         Water as required

And mix it well to the consistency same as dosa batter (semi thick).



Making dosa:
1.    Heat the dosa tawa. Flame should be kept at slightly higher than medium.

2.    Now take 1scoop of dosa batter and spread it in the tawa either in thin or thick size as per your preference.

3.    Drizzle oil and leave to cook until it turns golden brown on backside.

4.    Now remove the dosa from pan and server it hot.

5.    Healthy and tasty dosa is ready to eat with any chutney or with sambar.
