Carrot Halwa (Rich in method)
The
carrot halwa recipe I showed here is a little time-consuming, yet very delicious
and will taste like a star hotel recipe. I cooked carrots completely in milk and
used condensed milk too.
*Adding a pinch of salt to the sweet recipe will enhance the sweetness of the dish. For any milk sweet ensure to add salt once the milk is completely absorbed. Else there is a chance of milk getting curdled.
Ingredients:
1. Grated carrot - 1 cup
2. Boiled Milk-1 Cup
3. Sugar-1/2 cup
4. Sweeten Condensed milk- 1/3 Cup
5. Ghee -1/4 cup
6. Pinch of salt
To Make Carrot halwa:
1. Take a heavy bottom or non-stick kadai.
2. Heat the kadai and add 3 tbsp of ghee and
slightly fry 1 cup of carrot for 30 seconds.
3. Now add entire 1 cup of milk and cook the carrot for 95% (milk also should be absorbed 95%)
4. At this stage add 1/3 cup of Sweeten Condensed
milk, mix and cook it for another 2-5 minutes.
6. Ensure to continue cooking till the carrot and
sugar combine well and there is 5% moisture. That is little loose in texture
then turn off the stove.
7. Carrot halwa is ready.
8. Because
the sugar in halwa tends to become little tight and will reach the right consistency
while serving.
Now delicious rich carrot halwa is ready. You can eat it as such (or) server halwa with 1 scoop of vanilla ice cream.
cooking temperature :
Keep the flame in sim till carrot and milk mixture cooks 50%. Then you can alter the flame between high and sim.
Note:
1. Ensure to a use heavy bottom or nonstick kadai
to avoid burning at the bottom.
2. If you are using unsweetened Condensed milk
increase the sugar quantity based on your sweetness.
3. As I don’t like the ghee smell dominating I used
3 tbsp ghee in that start itself. If not add 1 tbsp at the start and the rest
you can add before turning off the stove and mix it well.
4. Similarly, you can use sweetened or unsweetened Khoya
instead of condensed milk in step 4. And follow the method as per point 2 mentioned
in the note.
5. Similarly, u can finely chop the cashew nuts
and add them as topping at the final stage (it's optional).
