Veg Pulao



Some people will get confused with biryani & pulao. Below is the difference between both.

Ingredients:
1.  2 cups basmati rice(Soaked)
2.  ½ tsp fennel seed
3.  1 inch cinnamon stick
4.  2 clove
5.  2 Bay leaves
6.  1 Start Anise
7.  4 green chilly (slit it)
8.  Few mint leaves
9.  1 large onion (sliced)
10.   1 ½ tsp Ginger garlic paste
11.   1 large carrot (chopped)
12.   ¾ cup beans
13.   ½ cup Green peas
14.   4tbsp cooking oil
15.   ¼ tsp butter
16.   1½ cups milk
17.   2 ½ cups water
18.   Salt to taste



Water & Milk Ratio:
Normally for biryani we will add 1:2 ratio.
For pulao approximately you can add 40% milk and 60% of water.
For making Veg Pulao:
1.       Heat a pressure cooker/ Heavy bottom Pan by adding 4tbsp spoon of oil & ¼ tsp butter.
2.       Once the oil is heated add
·         ½ tsp fennel seed
·         1 inch cinnamon stick
·         2 clove
·         2 Bay leaves
·         1 Start Anise
            Allow it to splutter.
3.       Now add 4 green chilly once its splutter (the green color will change to white a bit).  Then add in mint leaves and sautรฉ.
4.       Now add in sliced onion and sautรฉ until it turns light golden brown.
5.       Then add 1 ½ tsp Ginger garlic paste and sautรฉ till the raw smell of its goes away.
6.       Now add in
·      1 large carrot (chopped)
·      ¾ cup beans
·      ½ cup Green peas
           And saute for 1 minute.
7.    Now add required amount of salt and mix it well.
8.    Now add in the measured milk and water and allow it to boil. (   1½ cups milk & 2 ½ cups water)
9.    Once it starts boiling well add the soaked basmati rice by draining the water.
10.Now if your making in pressure cooker closed the lid and put the weight and cook it for 2 whistles.
11.If your making in a thick bottom pan tightly cover the pan with lid ensuring that air doesn’t escape. And cooked in on very low flame for 12 minutes. 
Now, Yummy delicious hot veg pulao is ready. You can server it with side dish like veg kofta , panner butter masala. Butter chicken etc.


Note:
1.       Depending upon the spicy level you can increase (or) decrease the quantity of green chilly.
2.       Salt level should be very slightly higher than the perfect level. So that when you add and cook the rice the salt level will be perfect.
3.       The reason why I added milk is, it helps in cooking the rice softly.
4.       People in India using packet milk 1st boil the milk and then add it. Sometimes milk may become curdle while boiling. To avoid this boil the milk and add.
