Instant Tiffin Sambar


This instant sambar is a very easy and quick recipe and the advantage is that no need to pressure cook dhal and no tramind pulp is required. You can serve it with any south Indian tiffin item.  
Ingredients:
1.      3 tbsp sesame oil
2.       ¼ tsp mustard seeds
3.       ¼ tsp cumin seeds
4.       ¼  tsp fenugreek seeds
5.       1 sprig curry leaves
6.       15 small onions (Indian shallots)
7.       1 tomato, chopped
8.       ½ tsp turmeric powder
9.       Red chilli powder(Based on your spice level )
10.   Salt to taste

For the sambar masala:
1.        ½  tbsp sesame oil
2.        2 tbsp toor dal
3.        1 tbsp coriander seeds
4.        1 tsp cumin seeds
5.        ½  tsp fennel seeds
6.        ¼ Black pepper
7.        4-5 red chillies
8.        ¼  asafoetida (hing)
9.        1½ tbsp fresh shredded coconut

For Making Sambar Masala:
1.       In a kadai  add ½  tbsp sesame oil Once the oil gets heated add the following
·         2 tbsp toor dal
·         1 tbsp coriander seeds
·         1 tsp cumin seeds
·         ½  tsp fennel seeds
·         ¼ Black pepper
·         4-5 red chillies
·         ¼  asafoetida (hing)
And roast it for 2 to 3 minutes.
2.       Now add 1½ tbsp fresh shredded coconut and fry it for another 1 minute.
3.       Now transfer all the roasted ingredients into a mixer jar and make it into a fine paste by adding water. Keep it aside.

For Making Sambar:
1.     In a kadai add 3 tbsp sesame oil Once the oil gets heated add
·       ¼ tsp mustard seeds
·         ¼ tsp cumin seeds
·         ¼  tsp fenugreek seeds
·         1 sprig curry leaves
            Allow them to splutter.
2.    Then add 15 small onion and sauté till it becomes transparent.
3.    Now add chopped tomato and sauté it for 2 minutes.
4.    Now add
·   ½ tsp turmeric powder
•   Red chilli powder(Based on your spice level )
•   Salt to taste
                 sauté it well.
5.    Now add the freshly made sambar masala and mix it well. At this stage add required amount of water and mix it well. And allow it to boil for 10 minutes (or) till the smell of masala goes away.
Now instant sambar is ready. Serve it with hot with idli ,dosa, pongal and khichdi.

Note:
1.    Instead of a small onion, you can use big onion too.
2. Based on the quantity required you have to alter the amount of ingredients mentioned for sambar masala.
